The easiest recipe to throw together! Don't forget to prep the toppings, they make the dish.

1 pound boneless, skinless chicken breasts (3 large pieces)
2 (10.75 ounce) cans condensed cream of chicken soup (Healthy Request Campbell's)
1 cup salsa (fresh refrigerated, I use the whole container)
2 cups frozen corn
1 (15 ounce) can black beans, drained and rinsed
1 teaspoon ground cumin
Toppings:
sour cream
diced tomatoes
green onions
diced avocado
tortilla chips
Mexican cheese
Spray your slow cooker with cooking spray. Add chicken to the bottom of the slow cooker. I always put my chicken in frozen (if cooking on low).
In a medium sized mixing bowl, mix cream of chicken soup, salsa, corn, black beans, and cumin. Pour over the top of chicken.
Cook on low for 6-8 hours.
Remove the chicken and shred. Place back into the slow cooker and stir. Serve with your favorite toppings.

Slow-Cooker Corn Chowder
Recipe FOUND HERE
Do not skip making the corn, onion, lime & bacon topping - it makes the dish! You won't be able to resist a second helping.
14 ears fresh yellow corn (about 3 lb.), divided
2 1/2 cups chicken stock
2 medium-size russet potatoes (about 1 1/2 lb.), peeled and chopped
1 small yellow onion (about 5 oz.), chopped
4 thyme sprigs
3 garlic cloves, smashed
2 teaspoons kosher salt
1 teaspoon black pepper
4 thick-cut bacon slices, cooked and crumbled
1/2 cup finely chopped red onion (from 1 small onion)
2 tablespoons chopped fresh chives
2 tablespoons fresh lime juice (from 1 large lime)
1 cup heavy cream
Cut corn kernels from cobs using a sharp knife. Reserve 1 cup corn kernels. Place remaining corn kernels in a 5- to 6-quart slow cooker. Working over a rimmed pan, use the back of the knife to scrape cobs to release all juices from cobs. Add corn milk, stock, potatoes, yellow onion, thyme sprigs, garlic, salt, and pepper to slow cooker.
Cover and cook on LOW until potatoes are very tender and chowder has thickened slightly, about 6 hours.
Meanwhile, stir together reserved 1 cup corn kernels, bacon, red onion, chives, and lime juice in a small bowl. Chill until ready to serve, up to 6 hours ahead.
Remove half of chowder, and set aside. Process remaining chowder in slow cooker using an immersion blender until smooth. (Or transfer half of chowder to a blender, and remove center piece of blender lid to allow steam to escape. Secure lid; place a clean towel over opening in lid, and process until smooth.) Stir together reserved and pureed chowder in slow cooker. Stir in heavy cream.
Divide evenly among 6 bowls; top evenly with fresh corn topping.
*To make this dish vegetarian, simply replace chicken stock with vegetable stock and skip the bacon.

The Best Taco Soup

1 46 ounce can of V-8 juice
1 15 ounce can corn, drained
1 15 ounce can kidney beans, rinsed and drained
1 7 ounce can diced green chilies
1 package taco seasoning
2 carrots, sliced thin
1 stalk celery, chopped
1 small yellow onion, chopped
1 pound ground beef
Toppings (optional)
Sour cream
Tortilla chips/saltine crackers
Graded cheddar cheese
Brown meat in skillet, drain and rinse. Mix remaining ingredients in pot. Bring to a boil, then lower heat. Add meat and let simmer for up to 3 hours. May cook in crockpot.

Spicy Buffalo Chicken Dip

Great football party dip.
2 (8 ounce) packages cream cheese
24 ounces chunk chicken breast or 2-3 boiled chicken breasts, shredded
8 ounces buffalo hot wing sauce
1 small bottle (8 ounces) chunky blue cheese dressing
2-3 cups cheddar cheese, shredded
French bread, celery, crackers, etc for dipping
Mix cream cheese, chicken, wing sauce, and blue cheese together and put all in crock pot, until melted (leave out the cheddar cheese). Set crock pot on high for 30 minutes to get everything melted fast, or leave on low setting for 3-4 hours. If using oven mix all in casserole dish, place in oven at 350˚ for 25 minutes. Cut up slices of french bread and celery, crackers and anything else that sounds good for dipping.

Cheesy Italian Tortellini

½ pound ground beef
½ pound Italian sausage
2 cups spaghetti sauce
1 can (15 ounces) petite diced tomatoes
9 ounce package refrigerated or fresh tortellini
Mozzarella cheese
Cook beef and sausage in large skillet. Add to crock-pot with spaghetti sauce and tomatoes. Cook on low for 7 to 8 hours. Stir in tortellini and cook another 15-30 minutes on low. Serve topped with mozzarella cheese.
