Preheat oven to 425 degrees
Scrub sweet potatoes and then prick all over with a fork. Place the potatoes on a baking sheet (lined with foil/parchment for easy clean-up). Bake until tender, or until a knife inserted in the thickest part has no resistance, about 45 minutes.
Let cool slightly.
Split tops open with a knife and season as desired (butter, cinnamon sugar, or with salt and pepper etc).
